Recipe serves 6 people
Ingredients:
- 6 sweet potatoes
- 1 cup black beans
- 1 cup corn kernels
- 1 ½ cups cheddar cheese, grated
- 1 ½ cups Greek yoghurt
- 2 limes, sliced
Method:
- Pre-heat oven to 180°C.
- Poke holes into the sweet potatoes and place them on a lined baking tray.
- Bake in the oven for about 45 minutes.
- Remove from oven, slice open and scoop out a little of the flesh.
- Stuff with black beans, corn kernels and sprinkle with cheese.
- Place back into oven and wait for cheese to melt.
- When ready, top with greek yoghurt and lime and enjoy.
